Goal for tonight, after a great day at work, but a day of rotten but not exactly unexpected news from my former employer: get this blog post written. It’s gonna be short and sweet.
This week’s scheduled recipe for the Rose’s Alpha Bakers project had amusing timing. Last weekend, my husband and I went to Vancouver for a friend’s wedding. On Monday, we took a drive up the sea to sky highway from Vancouver to Whistler, BC, and this recipe comes from the Araxi restaurant in Whistler BC.

This was really quite a simple recipe. Make the crust:


Add the flour, then the cream & egg yolk. Ta-da! Dough.

The filling – just mix lemon juice, eggs, and sugar, then whip up some cream, and fold it into the rest. Pour into a pie shell, and stop when you get to the rim, lest you end up with a great story like Marie.

Done! This made a great dessert on Saturday, with my parents visiting. Just had another piece tonight, and I think the rest might make it to work tomorrow.
I also made some honey cream caramels this weekend – but I’m thinking I’m not going to post about that. I have a seed of an idea and I need to see if it germinates. And if it does, see if I can take care of it long enough for it to grow roots.
Better a great crust than a great story.
